This is one of my top 5 most favorite recipes: Quiche with a pecan cheddar crust!

I love recipes that are easy and taste yummy.  The inspiration for this came from a sweet little lunch place that doesn’t exist anymore in Spartanburg, SC.

Ingredient List

The crust:

1 cup pecan halves

1 cup flour

1 cup shredded sharp cheddar cheese (I use the 2% store brand and it works just fine)

1/4 tsp. paprika

1/2 tsp. salt (optional)

1/3 cup canola oil

For quiche filling:

3 eggs, beaten

1/2 cup chicken broth (can I tell you how many times I haven’t had this in the house? Just make a half cup of chicken bouillon and you are good to go!)

1 cup sour cream (I use light or fat free–works like a champ)

1/4 cup mayonnaise (I used reduced fat)

Add-ins for the filling:

1 medium onion

1 red pepper

1 cup mushrooms

1 cup diced ham

1 cup of grilled chicken

1 cup of broccoli

2 teaspoons fresh rosemary or any other kinds of herbs (substitute less of the dry varieties)

(I usually cook the onion, pepper, mushrooms until they are cooked and add ham (but sometimes I just go with veggies.)


For crust, use a food chopper, food processor, or knife to chop the pecans.  Mix the pecans with the cheese, paprika and salt until combined.  (Note: if you use a food processor throw all the ingredients in and pulse until mixed)  Then stir in the oil.  Pour the mixture into a pie plate or quiche pan.  This should cover the bottom of the pan and go up the sides.  The crust mixture is pretty easy to work with. Bake the crust at 350 degrees for 10 minutes.  (Hint: I’ve found it works well to make the crust and get it in the oven, then cook the vegetables)

For the filling, combine the eggs, chicken broth, sour cream and mayonnaise in a bowl and whisk together.  The mixture will be slightly thick.  Add your cooked vegetables and pour into the pan.

Bake at 350 degrees for around 40 minutes.  Remove from the oven and let it sit for 10 minutes so the quiche will retain its shape.

Recommendations: My husband Dale says this is one of his favorite things I make.  It tastes really yummy reheated in the microwave for lunch the next day.
